Let's forget about business and have some summer fun over these delicious summer recipes.



Please your families taste buds with this hearty pasta salad

1 (8-ounce) package elbow macaroni, uncooked

2 Cups 1% low fat cottage cheese 

1/4 Cup skim milk

2 tablespoons minced fresh parsley

1 tablespoon minced fresh chives

2 teaspoons dried oregano

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 cup (2 ounces) shredded 40% less fat Cheddar cheese

1 (8 ounce) can no-salt-added tomato sauce

1/4 cup fine, dry breadcrumbs

2 tablespoons freshly grated Parmesan  cheese


Cook Macaroni according to package directions, omitting salt and fat. Drain, set aside

Place cottage cheese and milk in container of an electric blender: cover and process until smooth. Transfer to a large bowl; stir in parsley and next 4 ingredients. Add macaroni, and toss to combine

Spoon half of macaroni mixture into a 1-1/2 quart baking dish coated with cooking spray. Sprinkle with half of cheddar cheese; top with half of tomato sauce

Repeat layers. Sprinkle with breadcrumbs and Parmesan cheese

Bake at 375 Degrees for 30 minutes or until bubbly and golden. Yields 7 (1-cup) servings
